Kick-start your morning with this healthy veggie drink that’s packed with vitamins and minerals

Ingredients

3 to 4 ice cubes 

½ cup water 

1 beet, peeled 

1 Gala apple, medium dice 

½ avocado, peeled 

½ lemon, juiced 

1-inch piece of ginger, peeled 

¾ cup apple or orange juice 

Instructions

Chop the peeled beet into medium-sized chunks. Place the ice cubes, water and chopped beets in a large blender and puree for 30 seconds until smooth. Add the apple, avocado, lemon juice, ginger and juice to the blender and puree for 30 more seconds until smooth. Add a little water or more juice if needed.

Notes

Beets and apples are at their best in fall and you can find locally grown varieties at farmers markets throughout winter. Studies show that raw beets, especially red ones, retain more nutritional value, compared to their cooked counterparts. And like the spicy ginger in this smoothie, beets can help reduce inflammation in the body. Another bonus: they’re naturally sweet, so you can limit the fruit juice in your smoothie without sacrificing flavour. Drink up!
